I am Ratank Om, and I learnt these traditional techniques through observation over many years. Some of these techniques include packing the fish with fresh herbs such as kaffir lime leaf & lemon grass and later covering it with salt to grill directly exposed. This is only way to keep the essence of the fish's flavors intact. Included in this experience is also grilled pork ribs. We will also make the legendary green mango sauce that all Khmers absolutely love!
