Some say the culinary history of Vietnam has distilled the best of its colonial and native flavors and settled down today on what is notably the most seductive cuisine on the planet - well, at least for some. As you step into the backstreets and into local households, the dynamism of Vietnamese cuisine suddenly goes over and beyond what you see in the streets and restaurants taking on a different interpretation. Like individuals forming meanings as they marvel at a masterpiece, the Vietnamese cuisine can suddenly become a personal interpretation and take on a character of its own from street to street and household to household. Backstreet Academy will give you access to one such interpretation where you can explore the Hanoian Cuisine with a culinary character of its own. Start by choosing 1 menu among 5 menu below. My now husband and I are on our honeymoon and had a fantastic time visiting the market, watching and learning to cook delicious Hanoian style dishes with Mrs. Hang and Mai. Food was beautiful, we chose the Beef Phó menu which included dishes we've never tried before! Highly recommend this to anyone who loves Vietnamese food and would like to learn a some tips and tricks to take home to your own kitchen. Amazing!!!

We had a great time with Miss Hang and Mary (the translator). We visited the markets to start and were shown lots of fresh produce and bought everything we needed for the class. Miss Hang welcomed us into her house and we cooked with her for a few hours, learning many different vegetarian dishes. They catered the dishes so they were all vegan for me, and they were all sooooo delicious!!! Mary was so helpful offering us advice about Hanoi and giving us tips. We sat down and enjoyed some apple rice wine and all the dishes we'd prepared until we were full to the brim! They even got my boyfriend a little birthday cake with a candle and Miss Hang gave us a souvenir to take away. What an amazing experience this was!! I would reccommend this to absolutely everyone not just for the cooking (and eating) but for the cultural experience as well. It was all so personal ans such great value for money. Thank you Miss Hang and Mary!!

Rob and I are chefs and restaurant owners in Medellín and Cartagena, Colombia, so naturally we were really looking forward to our cooking class in Hanoi. We were extremely surprised how much we learned and how talented Mrs. Hang is; aside from being a lovely person she is a fabulous cook! David was a great help too making sure we got all our questions answered and explaining the step by step details of everything that was going on. He was such a sweet person and really did lesson the language "barrier" although in a kitchen the "barriers" are much less!! We prepared all the dishes we planned for and more! We toured the market right in from of her house first, bought all our ingredients and then started cooking at her home, luckily her kitchen fit the 4 of us and we had a feast fit for royalty a few hours later. Our experience was overall extremely rewarding and surpassed our expectations. Mrs. Hang was generous of spirit and time and we learned so much about traditional Vietnamese cuisine. We would recommend Backstreet to a friend for sure and are looking forward to the other activities we have booked with BSA! Cheers, Carmen Angel

We were well supported by the lovely David who picked us up from the hotel and returned us stuffed from gorging ourselves on fabulous home made goodies. We took a book to try to write it all down but we were so busy chopping and stirring that I don't think we quite got it all. The gentle and cheerful mrs hang was a wonderful host, patient and generous with her time. After three hours of prep we had the most lavish spread of pork and shrimp(latter cooked and eaten with shell on), fried tofu in fish sauce, braised pork belly with tiny eggs that had been boiled, fried and then braised, tofu and tomato soup and bitter melon(very bitter). We were more sous chefs as Mrs hang is the experienced chef having provided meals for Japanese businesses for over 25 years. A quick trip round the market and Mrs hang was very accommodating and happy to allow us to try food we'd seen in the market. We even had yummy fruit desserts and apple wine. Seriously we could not have had a better experience thanks to Mrs hang with the brilliant support of David who is passionately patriotic , thoughtful and friendly.
