If you've ever seen traditional Rajasthani thali then the first thing that stands out is the variety of dishes on your plate - on average we counted anywhere between 10-15 different types of food in a typical Rajasthani thali. While this is the ideal situation, we figured that for beginners it was best to design a Rajasthani Thali Lite! A course that keeps with the essence of the cuisine that combines sweets, ghee and spices.
The cuisine of Rajasthan is primarily vegetarian and our lite version is no different. Kailash ji generally likes to start by making the Halwa as it's the simplest and best served cold. With the halwa done, you will move on to chopping the vegetables that will ultimately go into all the subsequent dishes that consist of pulau, bhindi curry, chapati and matar paneer. If there was one item on this list that blew our mind away, it was the matar paneer! Kailash ji has her own way of making it and this is one part of this class that you should be paying full attention to.
