Everyone cooks this staple in their family favored tradition so you might get very different tastes across households! The trick is in the spices and their proportions.
Dal Bhat usually comes together with 2 other main dishes, a meat curry and a vegetable dish, usually cauliflower with potatoes. Then you cook the lentils soup with a secret procedure that you'll find out! Finally the chutney made of roasted tomatoes, garlic, coriander is the icing no one goes without!
